Christmas Celebration with Olivia and Rex

Just as I am taking down my Christmas trees and tucking everything away, it is time to give away the last of the gifts. Olivia, Rex and Tara stopped by today on their way to visit the family. I cannot believe how much the two of them have changed since Thanksgiving.


Olivia still does not like to have her picture taken and quickly looks away but she is still cute as a bug. One might wonder why she is wearing a spring shirt in the middle of January. She dressed herself.



The baby food all over his face and the fact that he ate twice in the short time that he was at our house, might explain the growth of this one. :)

I couldn't hold the suprise off any longer. Olivia had already been in to the front room to check these out several times.




Olivia, of course gets to go first.



She made quick work of that tissue paper. She must have gotten some tips from baby dog.

I'm pretty sure the three of them are going to be best friends.

Next up, Rex. Olivia helped with the unwrapping.


Rex got his very own baby book. He doesn't look too excited about it but Tara sure does.


There was even a little something for the birthday girl.

Olivia was quick to offer her unwrapping services.

Fall

Fall is my favorite time of the year. Beginning on September 23rd the schedule picks up and I love it. The first weekend of October is always the weekend that my Mom and I head to the Spoon River Scenic Drive. However, this year we got a little bit later of a start because I went to the Metro Link Prom this year with one of my besties. What Fun! Metro Prom was a good lead into the following weekends Diva Party. Then Kent and I spent the next couple of days together. We headed to the winery with some friends and spent our anniversary at Pier Marquette. The Four Hearts Halloween Party was this weekend and next weekend is our annual fall pumpkin carving party. Now we just need to get a plan together for Halloween weekend. We can't possibly have a free weekend in October can we? Stay tuned.

The "Best" Burger

So it has been a while since I blogged, I know, I know, and with all of my aspirations of blogging on a regular basis. I won't even make promises at this point saying that I will do a better job of blogging but here is my attempt to get back into it.

The Hubs and I headed out for a well deserved night with friends this weekend. We attended a Gateway Grizzlies baseball game. The Grizzlies are the minor league baseball team in Collinsville. They were playing the Normal Cornbelters, i know funny, right? The Grizzlies got completely creamed which was unexpected since they have been having such a good year. The final score was 0-7. :(

There are many aspects of minor league baseball that I enjoy. The seats were very close, no need for binoculars. The parking was free and all of the delicious food was in walking distance. Not that we needed to have things that close, since we were in a party box and had our own personal wait staff. Also something we could not easily do at a major league baseball game.

One of the things that Kent and I had been looking forward to trying was the "Best" Burger. If you have not heard of this burger, it has a Krispy Kreme bun. *drool* That alone could make it the best burger in my book or the fact that it was covered in bacon and cheese. We no sooner got to our seats before we order a "Best" Burger. Yes after all the wait and all the hype we only ordered one. In our defense, there were some many other things that we wanted to try. We also got an order of pulled pork nachos, yum. Unfortunately, the burger was over sold and under delivered. The bun was delicious, the bacon crispy, but the actual burger was sub par at best. The only thing that I can think to do now is try it at home myself. I need to plan "a night at the ballpark" dinner party. Stay tuned that has to be coming soon.

Cinnamon Sugar Coffee Cake

Cake:
3/4 c. butter, softened
1 1/2 c. sugar
3 eggs
1 1/2 tsp. vanilla
3 c. flour
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1/4 tsp. salt
1 1/2 c. sour cream

Filling:
1/3 c. packed brown sugar
1/3 c. sugar
1/2 c. finely chopped pecans
1 1/2 tsp. cinnamon

Heat oven to 350 degrees. Grease 12 cup bundt pan. In large mixing bowl, combine butter, sugar, eggs, and vanilla. Beat on medium speed for 2 minutes. Mix in flour, baking powder, baking soda and salt alternately with sour cream. Spread 1/3 of batter in pan and sprinkle with 1/3 of filling. Repeat twice.

Bake 60 minutes or until wooden toothpick inserted in center comes out clean.

Lipcolor

I am super excited about a new product that a friend of mine turned me on to. I'm sure many women have the same problems with lipcolor that I do. Having to constantly reapply lipcolor every time I eat, drink, kiss, anything. Once my lips touch something the color is gone *sigh*. So here it is


It's by maybelline and it's called colorstay lip color and the best part I got it at target for $6.00. It claims to be a 16 hour color. The best that I have gotten is 10 hours but still 10 hours. It is only necessary to reapply the conditioning balm when your lips feel dry. I love it.

Amazing Dinner

I made the most amazing dinner from Pioneer Woman this weekend.

I started with the Grilled Ribeye with Onion-Blue Cheese Sauce.

Ingredients
•2 whole Ribeye Steaks
•2 Tablespoons Butter
•Salt
•Pepper
•4 Tablespoons Butter
•1 whole Very Large Yellow Onion, Sliced
•1 cup Heavy Cream
•½ cups Crumbled Blue Cheese

Preparation Instructions
Salt and pepper both sides of the steaks. Grill in 2 tablespoons butter until medium rare.

Saute onions in 4 tablespoons butter over high heat. Cook for 5 to 7 minutes, or until dark and caramelized. Reduce heat to simmer and pour in cream. Cook for 3 to 5 minutes, or until reduced by half. Stir in blue cheese until melted. Serve steaks on generous portion of sauce.

Then Creamy Mashed Potatoes

Ingredients

•5 pounds Russet Or Yukon Gold Potatoes
•¾ cups Butter
•1 package (8 Oz.) Cream Cheese, Softened*
•½ cups (to 3/4 Cups) Half-and-Half
•½ teaspoons (to 1 Teaspoon) Lawry's Seasoned Salt
•½ teaspoons (to 1 Teaspoon) Black Pepper

Preparation Instructions
Peel and cut the potatoes into pieces that are generally the same size. Bring a large pot of water to a simmer and add the potatoes. Bring to a boil and cook for 30 to 35 minutes. When they’re cooked through, the fork should easily slide into the potatoes with no resistance, and the potatoes should almost, but not totally, fall apart.
Drain the potatoes in a large colander. When the potatoes have finished draining, place them back into the dry pot and put the pot on the stove. Mash the potatoes over low heat, allowing all the steam to escape, before adding in all the other ingredients.
Turn off the stove and add 1 ½ sticks of butter, an 8-ounce package of cream cheese and about ½ cup of half-and-half. Mash, mash, mash! Next, add about ½ teaspoon of Lawry’s Seasoning Salt and ½ a teaspoon of black pepper.
Stir well and place in a medium-sized baking dish. Throw a few pats of butter over the top of the potatoes and place them in a 350-degree oven and heat until butter is melted and potatoes are warmed through.
Note: When making this dish a day or two in advance, take it out of the fridge about 2 to 3 hours before serving time. Bake in a 350-degree oven for about 20 to 30 minutes or until warmed through.

and finally Texas Sheet Cake

Ingredients
FOR THE CAKE:
•2 cups Flour
•2 cups Sugar
•¼ teaspoons Salt
•4 Tablespoons (heaping) Cocoa
•2 sticks Butter
•1 cup Boiling Water
•½ cups Buttermilk
•2 whole Beaten Eggs
•1 teaspoon Baking Soda
•1 teaspoon Vanilla

FOR FROSTING:
•½ cups Finely Chopped Pecans
•1-¾ stick Butter
•4 Tablespoons (heaping) Cocoa
•6 Tablespoons Milk
•1 teaspoon Vanilla
•1 pound (minus 1/2 Cup) Powdered Sugar

Preparation Instructions
In a mixing bowl, combine flour, sugar, and salt.

In a saucepan, melt butter. Add cocoa. Stir together.
Add boiling water, allow mixture to boil for 30 seconds, then turn off heat. Pour over flour mixture, and stir lightly to cool.

In a measuring cup, pour the buttermilk and add beaten eggs, baking soda, and vanilla. Stir buttermilk mixture into butter/chocolate mixture. Pour into sheet cake pan and bake at 350-degrees for 20 minutes.

While cake is baking, make the icing. Chop pecans finely. Melt butter in a saucepan. Add cocoa, stir to combine, then turn off heat. Add the milk, vanilla, and powdered sugar. Stir together. Add the pecans, stir together, and pour over warm cake.

Cupid Crunch

3 c. salted peanuts
16 oz. bag of nibblers
15 oz. dried cranberries
12 oz. box of corn and rice cereal
8.9 oz. box of toasted oat cereal
2 (16 oz.) packages of vanilla flavored candy coating, melted
1 c. pink sanding sugar

Combine the first 5 ingredients in a large container. Pour melted white candy over the toy and gently stir to coat. Spoon mixture onto wax paper, sprinkle with sanding sugar. Cool completely.
